Yeah, what about the rice and beans, man? They were an important part of El Burro’s plates as I recall–and what about what Cassaundra said about Mario actually using fresh ingredients to make his Verde sauce year-round? (All of the ingredients can in fact be accessed fresh year-round, and rather easily, at that. I don’t know why you think they can’t.)

I have not tried this recipe … I love your enthusiasm … but my family talks about all El Burros all the time. How can we get the recipe? The rice the beans the salsa the Suiza sauce … I the verde sauce .. we need to know! If no other locations open .. it is so sad to think these recipes will not be enjoyed my the rest of us humans. We have to find a way. I also miss the beets and vinegar salad so much and the staff .. I swear the same awesome waiter worked there for years … tall Caucasian fella … I would love to experience it again. 😇

Worked as a busboy at El Burro Campbell, high school 1976. My favorite restaurant of all time and was a staple and icon, never to be duplicated by anyone. I miss that place

Unfortunately your recipe albeit looks mighty tasty is not what Mario would’ve created. They were all fresh ingredients regardless of the time of year. How do I know? My husband is the grandson of Mario and knows the recipe of course. So keep trying, you’ll get it.
