Scott’s Simple Salsa
Delicious, fresh made salsa from cans
This Salsa recipe took a lot of research and development to create. I gathered all the highest rated salsa recipes found online and combined the best of each into this recipe.
This is not a copy of El Burro salsa. It isn’t meant to be. It’s meant to be a delicious salsa, far better than grocery store salsa. It’s simple, fast, delicious, cheap, and easy.
Check with your local Taquera or market. If they have a kitchen they probably have a fresh salsa you like for sale by the pint. They often have fresh daily made corn tortilla chips too.
Scott’s Simple Salsa
Ingredients:
- Corn tortilla chips
- 1 can fire roasted Rotel (strain the liquid for 5-10 minutes, but save liquid)
- 1/4 cup chopped cilantro
- 1/2 cup chopped onion
- 1 garlic clove chopped
- 1/2 jalapeno or serrano chopped
- 1/4t cumin
- 1/4t kosher salt
- 1/4t sugar
- Juice of 1/2 lime
Instructions:

- Combine all except cilantro and blend smooth. Pulse if you like more chunky.
- Adjust flavor using jalapeno, cumin, salt, sugar. But wait for these to meld before adjusting again.
- Light blending of cilantro, chill a few hours for flavors to marry.
- Return some of the strained liquid to the salsa if it’s too dense.
- Use regular RoTel if you can’t find fire roasted.
