How close do you think this this recipe to the real El Burro Chile Verde you remember?
Was it missing something? Too much of anything? What did you change?

The Beans. Who has a legit recipe for El Burro like frijoles? I’ll bet it’s surprisingly simple as the Chile Verde.

El Burro Chile Colorado. It might be as simple using red Enchilada Sauce instead of green. Have you tried making it? Tell us about it.

Hello Scott, thank you for sharing these recipes. I have been going to El Burro my entire life. I was born and raised in San Jose, but have lived in So Cal the last 20 years. My wife’s family is still there, so every time we’re in town we head there. I was so sad to see them close. I’ve only ever had one thing off the menu, and that was the cheese enchiladas with the verde sauce. Do you know if the sauce for the chili verde is the same sauce? Also, do you happen to have their rice… Read more »

I’ve lived in San Jose for 40 years and have always gone back every few months to get my Chili Verde fix at El Burro’s. Moved to Sacramento area a few years ago and haven’t been able to find anyone who could come close to El Burro’s Chili Verde.When I heard they were closing I was tempted to ask if I could buy the recipe from him. I’ve tried and tried different recipes to no avail. Tomorrow I’m going to attempt one more time with your recipe and keeping my fingers cross. I would love to sit down one more… Read more »

I had no idea El Burro had closed up. I grew up in San Leandro and would go to the Fremont location a few times a year for their delicious chile verde. I’ve since moved away and I’m sad to hear that El Burro won’t be there when I’m back in town.

I was so happy to find your recipe. I was heartbroken when El Burro closed and yes, they did have the best ever Chile Verde. I have been experimenting to try to duplicate the flavor as well and most of the steps you have are ones I’ve also done. I did see one comment about how to get a greener color. A Mexican friend of mine once told me to puree some iceberg lettuce and add to stews and pozole to help thicken it as well as to color it. Thought I’d share that with you.

When I used to ask about the recipes, I was told that they used LARD in almost everything. Their beans and rice were incredible…super delicious every time. I know the head cooks name was Sammy, the bus boys that work at Luna may know how to get a hold of him or the owner, was it Stephanie?
